Garlic breath is halitosis (bad breath) resulting from the consumption of garlic.

Cause

The main volatile compounds responsible for garlic breath are allyl methyl sulfide, allyl methyl disulfide, allyl lanaptaptan, diallyl disulfide, dimethyl disulfide and methyl mercaptan, together with small amounts of dimethyl selenide. Various other sulfur compounds are also produced when allicin in garlic is broken down in the stomach and liver. Of the many compounds, allyl methyl sulfide (AMS) does not decompose quickly and remains in the body in significant amounts a few hours after consumption, resulting in a stink that can last for hours - or even for two days. AMS is the only organosulfur compound derived from detected garlic in the lungs or urine, as well as the mouth, meaning that the AMS is reabsorbed into the bloodstream and runs into other organs for excretion - the lungs, kidney and skin. Anaerobic bacteria, which do not metabolize oxygen, are the main source for producing Volatile Sulfur Compounds (VSCs) that cause bad breath.

Remedies

Mouthwash or breath is not very effective, because sulfur compounds absorbed into the bloodstream, and out of the body through the lungs and skin. Eating parsley is a common folk medicine, although its effectiveness has not been verified. Studies conducted at Ohio State University have shown that drinking milk can reduce "garlic breath". Lettuce, chicory, celery, potatoes, parsley, mint leaf, peppermint, basil proved to be the best medicine according to the study. Eating these raw foods is more effective than being heated. Indeed, the enzyme that degrades the sulfur compounds responsible for the garlic breath is sensitive to heat and is found in the foods previously mentioned.
